Bottle Gourd Recipe



1 medium sized bottle gourd/opo squash/long gourd
1/2 cup grated onions
2 chopped green chillies
1 tbsp ghee
2 tsp chopped garlic
1/2 cup chopped tomatoes
a pinch of garam masala powder
1 tsp Amchur/dried Mango powder
2 tsp lemon juice
a pinch of turmeric powder
chili powder to taste
salt to taste

Peel and grate bottle gourd, put in pressure cooker with 1 tsp water and steam for 1 whistle/pressure release
Cool and drain out all water by pressing the boiled gourd into a colander or strainer
Heat the ghee in a pan, add onions and garlic and saute
Add the turmeric, green chillies and salt and saute for about 2 minutes
Add the boiled gourd, mix well and cook for 3 minutes
Add the dried mango powder, mix well and cook for another 1 minute

Serve hot.
