Coconut Shira


4 Tbsp. Cream of wheat

Ghee for frying

2 cups Coconut Milk

2 Tblsp. Jaggery

4 Tblsp. grated Coconut

½ tsp. Cardamom powder

small handful Cashews, chopped

small handful Raisins, fried in ghee

Fry the semolina in a little ghee until it darkens a few shades. Pour in the coconut milk and stir well. Add the sugar and cook on low heat. Meanwhile, fry the coconut lightly, then add to the Shira mixture along with the nuts, raisins and spices. Cook until the mixture becomes quite thick, stirring frequently.
