Bitter Melon Pancakes (theplas)
1 cup whole wheat flour
1/4 cup bajra (black millet) flour
1/2 cup finely chopped bitter gourd (karela)
1/2 tsp grated garlic
1/2 tsp turmeric powder
1 tsp chilli powder
1 tsp coriander powder
1 tbsp chopped cilantro
salt to taste
2 tsp ghee to brush the pancakes (theplas)
- Combine all the ingredients and knead into a firm dough using enough water and knead well.
- Divide the dough into 10 equal parts and roll each portion into a circle of approx. 125 mm. (5″) diameter.
- Cook each thepla on a non-stick pan till both sides are golden brown.
- Brush each thepla with a little ghee and serve hot.
