Potato Vegetable Recipe

Although potatoes are not wholesome and should not be eaten from an Ayurvedic point of view because they are both Vata and Kapha aggravating as well as heavy for digestion, they can be had every once in a while when agni and season permits.



250 gms Potato
2 tbsp ghee
1/4 tsp Turmeric  Powder
2 Green chili
4-5 Curry Leaves
1/2 tsp Mustard seeds
Salt as per taste

How to make simple potato vegetable:

  • Boil, peel and cube the potatoes.
  • Heat ghee in a pan, add the mustard seeds, slit green chillies, curry leaves, saute until the seeds start spluttering and popping (this is their singing to you that the oil is hot enough for the other spices and items), add salt and turmeric powder and cubed potatoes, add little water so that the potatoes absorb the spices (masala) and simmer for 4-5 minutes till well blended.
  • For a different taste you can substitute mustard seeds with cumin seeds.
